Or... You can replace the pot in the servo with 2 cds cells, send a centering signal to the servo, and put a piece of cardboard between the cds cells. When they are unevenly illuminated the servo will run one way or the other (cw/ccw). Just remember to hack out the servo stops inside the case. Using an Arduino for this is like killing a mosquito with a shotgun. Effective, but not efficient. Have fun.
