I built a breakout board for the clickwheel connector. This way I was able to probe which pins connect to where on the chip. I posted my results on Github.
The chip on my board has the label "CY8C21434".
If this protocol works the same as the 4th gen, then I should be able to set up the arduino in SPI slave mode to communicate with the wheel.
