This was the most successful footprint that I tried. It has solder mask relief on the component side and the reverse, with the LED mounted upside down. Forgive me the Crusty soldering job. The LEDs have a substantial gap in this configuration that may necessitate some form of non-melting filler or clip to span the gap without the enormous solder globs.

You should check out the "surface mount - Bottom Entry" category of the Digikey LEDs

There actually are a lot of LEDs designed to be mounted upside-down! It's super cool
