Lions long dreamed of having a gas stove, but gas stoves near any employment have a $3 million tag. A plasma cutter is basically a flame generator with only air & electricity as the consumables. There's no need to store highly refined jet fuel under the bed.
All it needs is a way to avoid cutting up the pot, pressurize the air without a loud compressor, & respond quickly to throttle changes. If any part of your body goes near the flame, it's gone, where a butane flame would have a little more delay. There might be easier ways, if the only goal is rapid throttle changes. The most responsive heating element is a gas, but the thermal inertia of the pot, the grille under the pot, & the food itself must also be overcome.
Someone in China finally invented a plasma cutter stove. They have a large number of small flames to try to reduce the temperature. As usual for recent chinese inventions, if you need to know the price, you can't afford it.
