The esp can easily take 5v on the logic pins so there is no need
did you mean to say that tx /rx pins pf esp01 can handle 5v ?
but i read in data sheet of esp01 that maximum Voltage of 3.3 volts for any pins

Why didn't you add logic level converters in it, so it can easily programmed with Arduino?
