Your project is super amazing. To maintain water temperature is essential when you are using tankless water heater. Setting of temperature depends on the inlet water temperature and the temperature you want. Im purchasing an older RV that I plan on geeking up and they sell tank monitors that come with a 2 wire stick to the outside of the tank sensor strips. Check out SeeLevel II. You might be able to use the sensors or whole system. Its only 299 for the system and it can hook up to LP sensor to monitor LP gas tank. The sensors are also very cost effective.

Install a water level indicator system with float switch sensors inside your rooftop tank, connected to an LED indicator panel inside your house via a cable. This setup will show the water level in 25% intervals (0%, 25%, 50%, 75%, 100%). It provides a convenient way to monitor water levels without climbing to the roof.
