I will post a sketch of what I am planning very soon:
Front Panel
Touch screen, with 4 buttons underneath for triggering underneath. Size of buttons TBC
Side Panels
Slots to hold an internal shelf, i2C and USB breakouts?
Bottom side
Holes for rubber feet to be screwed into
Back side
Power in, USB ports of Pi/s exposed for connection?
Inner shelf
For mounting Pis to.
The Enclosure could bear a resemblance to this great build; just change the disck drive on the front for some buttons and lose the keyboard/mouse :)

I have slightly amended my design to make it a bit better aesthetically; the front panel will be flat rather than sloped.
Need to work out dimensions soon:
The Screen will be the same screen used in v1, so I have the dimensions of that; same with the arcade buttons that will go under it.
The two Pi's dimensions are easily attainable online.
Housing these components will give me a good estimation of what the sizes need to be; some space will be taken into consideration for cable management too!

I am delight to welcome Alex Rich on board with this project!
Alex was the driving force behind version one. If Alex hadnt created the enclosure for v1 i very much doubt that this project would have ever got of the ground.
Cant wait to see what Alex can do for for version two!!
